Brand: Down to Earth

Buckwheat (which is not part of the wheat family) produces a seed that is 3-D triangular in shape and has a black hull. Whole buckwheat still has this hull intact is mostly used for sprouting; its coarse hull makes it undesirable for cooked gruels.

No matter how you eat it, buckwheat is an excellent source of protein (more than soybeans) and contains high amounts of vitamins B1 and B2, zinc, copper, magnesium, and calcium. These minerals are helpful in preventing hypertension and anemia. In addition, buckwheat contains all of the eight essential amino acids which the body cannot produce. Whole buckwheat (not hulled) and flour milled from whole buckwheat has the added benefit of higher fiber content. Naturally gluten–free, buckwheat is an excellent alternative for those with wheat allergies.

Diets that contain buckwheat have been linked to lowered risk of developing high cholesterol and high blood pressure. The Yi people of China consume a diet high in buckwheat (100 grams per day, about 3.5 ounces). When researchers tested blood lipids of 805 Yi Chinese, they found that buckwheat intake was associated with lower total serum cholesterol, lower low-density lipoprotein cholesterol (LDL, the form linked to cardiovascular disease), and a high ratio of HDL (health-promoting cholesterol) to total cholesterol.

When your health and the health of your family is on the line, remember: Farm2Kitchen organic offerings. It’s worth it.

Organic refers to the way agricultural products are grown and processed.  It includes a system of production, processing, distribution and sales that assures consumers that the products maintain the organic integrity that begins on the farm.

This system, which is governed by strict government standards, requires that products bearing the organic label are made without the use of toxic and persistent pesticides and synthetic nitrogen fertilizers, antibiotics, synthetic hormones, genetic engineering or other excluded practices, sewage sludge, or irradiation.

Guided by these and other standards, organic is the most heavily regulated and closely monitored production system in the U.S., enabling you to choose organic products with confidence.

Mounting evidence shows that organic foods are rich in nutrients, such as iron, magnesium, and vitamin C, which are critical to maintaining good health.
