A bajra roti is a plain, flat bread popular in some areas of Asia, particularly India. Bajra rotis look similar to small flour tortillas. Their nutritional value is similar to other types of flour-based foods, with high carbohydrates and low protein. They're often used as a side dish for meals including vegetables or meat.

Bajra, a foodgrain known in English as Millet, is cultivated extensively in Rajasthan. It is consumed locally as leavened bread called Bajre ri roti, or as a gruel called Bajre ri khicdi.

The basic ingredients for a single bajra roti are: 1/3 cup of millet flour, less than a pinch of salt, water and under 1 tbsp. of ghee. This makes a bajra roti approximately 6 inches wide. Ghee is a high-fat clarified butter commonly used in Indian cooking. Millet flour is gluten-free. Optional added ingredients suggested in an Indian cookbook by Tarla Dalal include mashed potato, fennel, onions, coconut, garam masala and coriander.

Ingredients 1 cup millet flour (black, bajra) 1 cup fenugreek leaves (chopped methi) 2 large garlic cloves (chopped) 1 tbsp low-fat yogurt salt 1/2 cup low-fat panir 1 green chilis (finely chopped) 1/8 tsp turmeric (powder) 1/4 tsp fenugreek leaves (dried, kasoori methi) 3 tbsps coriander (chopped, leaves) 1 tomatoes (finely chopped) 1 tsp olive oil (cooking) Directions Lightly crush the fenugreek leaves and garlic with a little salt. Add to the bajra flour and knead into a soft dough using the low fat yoghurt and hot water. Divide the dough into 4 equal parts. Roll out each part into a circle of 4-5 inches diameter. Mix the filling ingredients together in a bowl. Now place a porton of the filling mixture on one half of each rolled circle and fold it over to make a semi-circle. Life the turnover carefully. Place it on a non-stick pan. Use a little oil and cook the turnover on both sides until golden brown on very low heat. These rotis are thick and will take a while to cook. Repeat with the remaining dough circles and the filling mixture to make 3 more turnovers. Serve hot. Note: You can make only the bajra roti using the garlic flavoured dough.
